Ingredients

(This can also be made with lamb or soy crumbles, etc.-obviously the nutrition would be considerably different and if you use soy crumbles the recipe calls for the addition of 1/2 cup of canola oil )
Yellow or Red Onion, 1 large, finely chopped
Serrano Peppers, 4-5 pepper s
Garlic, 16 cloves
Ginger Root, 4 inch piece, chopped
Tomato Paste, 6 oz
Water, tap, 2 cup
Peas, frozen, 2 cup
4 Tbsp ground cumin
4 Tbsp ground coriander
2 Tbsp Chile powder
2 tsp Turmeric
2tsp Garam Masala
1/4 tsp cardamom seeds or 3-4 slightly cracked cardamom pods
4-5 Bay leaves.
3 Tbsp cilantro
Directions
Put Ground Beef (or soy crumbles, etc) and onion-(if you are not using ground beef or lamb, you should add the oil now as well.)
Grind peppers, garlic and ginger in a food processor. Add to crock-pot. Pour the boiling water over tomato paste and whisk to dissolve. Add to the crock-pot along with all of the remaining ingredients except the cilantro and peas.
Cook for 3 hours on high. Add peas and continue to cook for 1/2 hour. Add cilantro at the end. I serve with rice or quinoa.
