Introduction

Number of Servings: 1

Ingredients

    Canned tomatoes (preferably chopped)
    1 clove of garlic
    1 Bay leaf
    1 small onion (white or red)
    100ml Red Wine
    1 tsp sugar
    1 tsp mixed herbs (oregano, sage, thyme, basil, margoram)
    Salt and pepper to taste

Directions

Firstly, soften the onion in a little oil (I use rapeseed oil) for a couple of minutes before adding the garlic and continue to soften for a couple of minutes. Be sure not to burn either the garlic or the onions. Add the tomatoes, wine, sugar, mixed herbs and bay.
Cook and reduce this for approximately 15 minutes. At this point you want to taste and season according to your preference and then cook for a further 5 minutes.
This goes perfectly with pan roasted chicken or meatballs.
