Introduction

This is a mixture of quinoa and chopped vegetables with lemon juice as a dressing. I eat this as a healthy filling lunch or snack.
I add black or kidney beans for added fiber, but they are not figured in the calories, so I add them after I measure my portion and calculate them seperately.

Ingredients

    1 c Quinoa
    2 c Water
    1 lg Red pepper-chopped
    1/2 c Green pepper-chopped
    1/2 c Green onion-sliced thin
    4 Stalks celery-chopped
    1/4 c Red onion-chopped
    Dash salt
    Dash pepper
    Juice from 1/2 lemon

Directions

Cook quinoa and cool
Chop all vegi's
Combine all together and add salt and pepper
Squeeze juice from 1/2 or more lemon to taste and mix well

Serving Size: makes 5 1-cup servings
