Introduction
These were the Flickinger Family's favorite treat around the holidays. Mom always made what seemed like hundreds of these Bierocks. Let me tell you, the sure didn't last long.Back then, she made her own bread dough or if she was in a hurry, she would buy Rhodes frozen bread dough. Well, now a days Rhodes makes frozen dinner rolls. Yay for me, I use the Texas Dinner roll. They are quick and easy to let rise and then all I need to do is flatten, fill and bake. Thanks to these frozen dinner rolls, Bierocks are not just for the Holidays in our house any longer. They make a great Super Bowl food too. BIEROCKS
I use Rhodes frozen white dinner rolls. Or you can use any type of frozen bread dough.
Or if you're really-really good, you can make my mom's bread dough recipe, it is much better and really worth the effort.
2 c lukewarm milk
1/4 c oil
2 eggs (beaten)
2 pk yeast
1/2 c sugar
1 ts salt
2 c plus of flour
Mix together milk and oil. Then add remaining ingredients. Knead and let rise for 1 hour. While bread is rising cook filling:
2 lbs. extra lean ground beef
1 Tbs onion powder or 1 onion chopped
1 large jar of sauerkraut
Salt and pepper
Shredded Sharp Chedder Cheese (2-3 cups)
Cook beef with onion powder, salt and pepper. Add sauerkraut (do not drain).
Continue to cook until all the liquid has evaporated. Cool hamburger/sauerkraut mixture. Add chedder cheese.
Roll out hunks of dough (about the size of a golf ball). Add a scoop (1/4 cup) of filling, fold over and seal.
If you use the frozen Texas Dinner Rolls, one roll per Bierock. Flatten, fill and pinch to seal.
Directions
Place on cookie sheet, seam side down. Bake 350 degrees for 20-30 min. or until golden.
