Ingredients

5 oz pasta
4/5 can no salt added diced tomatoes
1 oz parmesan cheese, finely grated
1 T olive oil
1 T light butter
8 oz mushrooms, sliced
1 green bell pepper, chopped
1/4 red onion, chopped
3 cloves garlic, minced
1 oz heavy cream
1 oz fat free milk
salt and pepper
fresh basil, finely chopped
Directions
Cook pasta according to package directions; drain.
Meanwhile, heat oil and butter in skillet over medium low heat and add garlic and onion. Cook for about 1 minute, then add bell peppers and mushrooms. Saute till vegetables are tender. Combine cream, milk, and tomatoes together and add to skillet. Season with salt and pepper. Stir in parmesan. Allow parmesan to begin to melt. Add pasta and toss with spoon till cream sauce forms. Remove from skillet, top with basil and additional parmesan if desired.
Serving Size: Makes 2 generous portions, or 4 small portions
