Introduction

Number of Servings: 4

Ingredients

    1 lb new potatos, boiled and cooled
    2/3 pound mixed fresh green and yellow beans, blanched and cooled
    2 cobs corn, blanched (then remove the corn from the cob)

    4 tbsp olive oil
    2 tbsp dijon mustard
    2 tbsp white wine vinegar
    1 tsp salt
    1/4 tsp pepper

    3 tbsp chopped fresh cilantro
    3 pepperoncini peppers, chopped.

Directions

Combine potatos, beans, corn, cilantro and pepperoncini in a bowl.

Combine oil, mustard, vinegar salt and pepper in a jar. Close lid tightly and shake. Dress salad and toss to coat.



Serving Size: Makes 4 meal-size servings or 6 sides
