Introduction
You may use this with whatever fruit you like, experiment a little bit. Hungry Jenny called for cranberries, but I used cherries. I also changed her recipe into an individual serving and used ingredients I had on hand versus her ingredients (for example, she used grapeseed oil, not vegetable oil) and made it sweetener free versus just sugar free (you don't need it, the fruit sweetens it enough).Delicious as breakfast or as a dessert. Ingredients
-
Ground almonds, 25 grams
Oats, 25 grams (instant works fine)
Crisco pure vegetable oil, 1 tbsp
Egg, fresh, 0.5 medium
Baking Soda, 0.5 tsp
Baking Powder, 0.25 tsp (this was actually 3 pinches worth)
Sweet Cherries, 25 grams (or whatever amount you feel comfortably fits in the ramekin)
Directions
1) Beat the eggs with the oil.
2) In a separate bowl, mix the almonds with the oats, baking powder and soda. Gently fold in the fruit (or wait and simply press the fruit into the mixture after scooping into ramekin).
3) Add the liquid mixture until combined.
4) Pour into a PAM sprayed ramekin bake at 340F degrees for 20-30 minutes until set. It should still be quite soft on the inside, but they will firm up as they cool.
