Ingredients

    8 Tbs Butter
    2 8oz cans of oysters (drained and rinsed)
    1 Cup chopped onion
    1 1/2 Cup chopped Celery
    1 Tbs Garlic
    1/2 tsp onoin powder
    1/2 tsp red pepper (ground)
    1 Tbs Parsley Flakes
    4 cups milk (1%)
    1 cup water
    2 cup chopped potatoes (I precook in microwave)
    2 tsp corn starch




Directions

Melt butter in pot. Add onion, celery, and garlic. Saute until tender. Add onion powder, red pepper and parsley. Add cooked potato cut into bite size pieces, milk and water. (Reserve small amount of cold milk to desolve corn sarch in.) Add corn starch mixture. Bring to slight boil, turn down heat and stir often. This is not a very thick stew, If you want it thicker add more corn starch. Makes 10 1-cup servings.

    Very easy to make and warming to the tummy for a rainy fall day.
    I seasoned with fresh bay laurel leaf and Penzy's Chesapeake Bay Seasoning (www.penzeys.com)... family reviews were thumbs up!
