Ingredients

    saute in 1 tbsp of olive oil:
    2 tablespoons chopped garlic
    1 cup onion chopped
    1 large potato cubed
    1 teaspoon ground cumin seed
    1 teaspoon ground corriander seed
    1 Tablespoon black pepper
    1 teaspoon red pepper flakes
    1 teaspoon salt
    1 cut up roasting chicken in pieces

    Cover well to season. Allow to cook on med heat for 20 -30 mins. remove chicken pieces from the pot and remove skin and bones. Cut the meat in bite size pieces and return to pot.

    Add:
    3/4 cup peanut butter
    4 cups cooked/canned garbanzo beans.

    Allow to simmer, adding water as needed to keep from getting to thick.

    Serve over rice or couscous or boiled potato.
