Ingredients

    1 tablespoon olive oil
    1 leek (finely chopped)
    2 medium carrots (sliced)
    2 garlic cloves (crushed)
    1/2 cup (125ml) fish or chicken stock
    1 tablespoon tomato paste
    1 1/2 cups water
    400g can diced or chopped tomatoes
    3/4 cup (165g) risoni (rice shaped pasta)
    600g any firm fish fillets (cut into chunks)
    1/4 cup chopped parsley or coriander

    crusty bread to serve
    optional - 1 long red chilli (seeded and finely chopped)

Directions

1. Heat oil in a large saucepan on medium. Cook leek, carrot, garlic and chilli for 3 minutes, until soft.
2. Add stock, paste, 1 1/2 cups water and tomatoes and bring to boil.
3. Add risoni and cook for 10-12 minutes, until risoni is just cooked.
4. Stir through fish, cover and simmer on medium heat for 5-6 minutes, until fish is cooked. Stir through coriander and serve with crusty bread.
