Ingredients

    1 package active dry yeast (2.25 teaspoons)
    .25 cup warm water (105 degrees to 115 degrees)
    1 teaspoon sugar
    .33 cup soy milk (110 to 115 degrees F)
    .25 cup smart balance light
    1 egg
    1 cup all-purpose flour
    .5 teaspoon salt

Directions

Add all ingredients to mixing bowl, mix until smooth. Allow to rise until double about 45 minutes. Use crumpet rings (remove top & bottoms from water chestnut or tune cans). Heat flat bottomed skillet, cast-iron best. Place greased rings on skillet, add a tablespoon of margarine to each ring, when melted, pour 3 tablespoons batter into each ring. Cook about 7 minutes until tops are bubbly, remove ring and turn -cook another 1-2 minutes until second side browns. Serve warm or cool and toast before serving, freezes well.
