Introduction

This is a mix that my husband and I like. This is a mix that my husband and I like.

Ingredients

    Lay a large piece of aluminum foil in a 13x9 baking dish. Spray lightly or use pastry brush to lightly cover with olive oil.

    Cut the beans into 2-3 inch lengths. Slice the rest of the vegetables and layer them in the pan. The zucchini should be sliced thinnest to allow for a uniform cooking time.

    Add a spray of olive oil on top, or ensure that all sides of the foil are covered.

    Fold the foil over, creating a seal. Wrap in a second piece of foil

Directions

Grill on the top rack or away from direct heat for 30-35 minutes. I cook this with chicken or larger pieces of meat with the gas grill at med/high; keeping the temperature between 325 and 350.

    Very Good
    For more flavor, I marinate the vegetables in fat-free Italian dressing instead of using the olive oil. I've also added asparagus and bell pepper to the mix. - 7/28/12
