Introduction

Ingredients

1 cup rice flour
1 cup wheat flour
1/2 cup desiccated coconut
1/2 half onion,finely chopped
4-6 sprigs of cilantro, finely chopped
2 serrano peppers, finely chopped
1 tsp salt
1 cup water
1 egg
2 tsp oil
Directions
Use a mixing bowl and mix the flour, coconut (softened with a little of the water and warmed slightly in microwave), onion, peppers, cilantro, egg, and salt. Add just enough water to for a soft dough. Knead the dough until it forms a ball, and not sticking to the bowl. Set aside the dough to rest for about 30 minutes.
Use your hands to shape the dough into balls, the size of a golf ball. Flattened them to for a circle the size of a saucer. Heat up a griddle and cook the flattened dough, lightly greased with the ghee. Best to serve hot.
