Introduction

Mostly sugar-free, could be completely sugar-free if you sub blueberries for chocolate pieces. Gluten free and made to suit our family's needs. Ingredients

    1/3 cup water
    3 large eggs
    1 stick butter
    3.5 tsp Truvia (or 1/2 cup of sugar)
    1 cup Ghirardelli Semi-Sweet Chocolate Chips (or one cup of anything else for muffin of choice)
    2 cups Gluten Free Organic Whole Ground Golden Flaxseed Meal
    2 tbsp cinnamon
    2 tsp baking powder
    1 tsp nutmeg
    1/4 tsp salt
    2 tsp vanilla extract

Directions

Preheat oven to 350 degrees and line your muffin pan with paper liners.

Combine Truvia and water in a bowl, set aside.

Combine dry ingredients (minus chocolate and Truvia) in a large bowl with a large whisk.

Melt stick of butter and whisk in eggs and vanilla extract in a separate bowl. Combine this with the Truvia/water combination and then mix with the dry ingredients. Once fully incorporated, fold in chocolate chip pieces. Fill paper cups 2/3 full.

Bake for 28-30 minutes or until toothpick comes clean.
