Introduction

Ingredients

4 Large regular cucumbers or 2 English cucumbers, peeled and sliced very thin
1-2 teaspoons salt
1 cup non-fat sour cream
2 tablespoons Splenda
2 tablespoons white vinegar
2 teaspoons dried dill
Directions
Place cucumber slices in a colander in the sink. Sprinkle the salt over all, and stir well. Let sit for 20 minutes to draw out water.
Rinse the salt off, drain well, then place cucumber slices onto a layer of paper towels or clean dish towel. Pat dry. In a medium mixing bowl, combine sour cream, Splenda (you may want to use half Splenda and half sugar), vinegar and dill. Stir very well. Add cucumber slices, stir until well coated, cover with plastic wrap and refrigerate. Best if made the day before serving, but chill at least 4-8 hours.
Serving Size: makes 8-10 1/2 cup servings
