Introduction

Ingredients

    1 cup whole almonds
    2 cups whole cranberries
    8 oz. whole dates
    3/4 cup whole wheat flour
    1 tsp. baking powder
    1/2 tsp. salt
    3/4 cup Splenda (can use sugar, but the cake will have more calories)
    1/2 cup egg beaters or 4 egg whites

Directions

Preheat oven to 325 degrees. Spray a tube pan with non-stick spray. Mix flour, baking powder, splenda or sugar, and salt. Stir in almonds, cranberries and dates. Add eggs. This mixture will be very hard to mix. The cake is all fruit and almost no batter. Don't worry, just mix it up and spoon it into the prepared pan. Bake for 50-60 minutes. To test doneness, insert a toothpick in the middle and see if it comes out clean. This cake needs no frosting. It's very fruity and not too sweet. And you don't have to chop anything to prepare it.
