Introduction
I wanted to make a hearty quesidilla that would fill me up with out me eating a large quantity. I was amazed at this recipe I threw together. Ingredients

4 tortillas - La Tortilla Factory, Whole Wheat Low Carb Tortilla (Fajita size)
1/2 cup - 4 Cheese Mexican Shredded Sargento
1 - Chicken Breast, no skin or bone
1 tbsp Water
3/4 Bell Pepper - chopped
3/4 Onion - chopped
3/4 Jalapeno Peppers - finely chopped
1 clove of minced Garlic
Directions
Heat oven to 375 degrees
Fill small pan 1/2 way with water, place chicken breast in the water. Cook for 25 minutes.
While chicken is cooking, in a skillet combine water, peppers, onion and garlic. Slowly simmer, stirring often while chicken cooks. About 10 minutes.
When chicken is done, finely cut into small cubes for filling. Add to pepper mixture. Place burner on low (setting 2) and let simmer approximately 5 minutes.
Place mixture aside.
Each tortilla will be one serving. Divide cheese into 4 servings.
In a small pan take 1 tortilla. Start to warm. Add 3/4 of the divided cheese to half the tortilla. Wait until cheese begins to melt, moving the tortilla so it doesn't burn. Add chicken and pepper mixture. Top with left over cheese for serving. Fold in half.
Press edges down with wooden spoon to help seal. Heat for around 2 minutes.
Repeat.
