Ingredients

    6 ounces sliced ham
    0.25 teaspoon ground cumin
    2 teaspoons fresh lemon juice
    1 1/3 tablespoon extra-virgin olive oil
    Salt and pepper
    1.5 cups mixed salad greens
    0.25 small Haas avocado, cut into 1-inch cubes
    0.25 tomato, cored, seeded, chopped
    0.25 small cucumber, seeded and diced
    1.5 teaspoons finely chopped red onion

Directions

1. In small dry skillet over low heat, toast cumin 2 minutes or until fragrant, stirring frequently.
2. In small bowl, whisk cumin and lemon juice together. Add oil in a thin, steady stream, whisking until blended. Add salt and pepper to taste.
3. In large salad bowl, combine greens with 1/4 cup dressing; toss to coat. Place on 4 serving plates. Mix avocado, tomato, cucumber, and onion with remaining dressing; toss to coat. Top each portion of greens with avocado mixture.
