Ingredients

2 cans of black beans
1 cup of thawed frozen white corn
4 medium green onions (sliced)
6 cloves of garlic (minced)
1 med-large sweet potato (yields approx 2 cups of shredded potato) shredded
1 Tbs ground cumin
1 cup of rolled oats
2 medium sized hot peppers (any variety will work(pick your spice))
2 eggs
1 Tbs olive oil
Directions
Drain and rinse black beans
saute green onion in olive oil
add garlic, hot peppers and cumin to pan
in the bowl of a food processor combine sauteed ingredients, black beans, shredded sweet potoato and rolled oats.
mix in corn and eggs
form into patties and broil about 4 inches from heat source 8 min on first side and 5 min on the other until crispy
