I modified another recipe i found on SparkRecipes (Ricotta Pumpkin Custard) I modified another recipe i found on SparkRecipes (Ricotta Pumpkin Custard)
Number of Servings: 4


    1/2 cup flour
    1/2 cup liquid eggs or Egg whites
    1/2 cup fat free Ricotta
    1/2 cup applesauce
    3 tsp brown sugar
    1/4 tsp baking powder


Preheat oven to 325F
1. Whip the eggs.
2. Add all the wet ingredients (ricotta, brown sugar, applesauce) and mix together with a hand blender.
3. Add flour and baking powder and mix again.
4. pour into baking dish then place in oven.
5. bake for 35 minutes.
6. Remove from oven and let cool slightly.

Serving Size: Makes 4 square servings
