Ingredients

3 bell peppers
1 c cooked quinoa
1/2 lb. ground turkey cooked and drained
2 tsp minced garlic
1 Tbsp. olive oil
1/2 c shredded mozzarella cheese (part skim)
1/4 c chopped sundried tomatoes
1 c shredded zucchini
1/4 onion finely chopped
salt and pepper to taste
Directions
Cut peppers in half lengthwise and clean out seeds and guts. Mix all other ingredients in a bowl. Spray cake pan with olive oil spray. lay peppers in pan and distribute meat/quinoa mixture evenly. Bake covered for 30-45 minutes.
