    1/4 c carrots
    1/4 c broccoli
    1/4 c onion
    1/2 c grape tomatoes
    1/2 lb lean ground turkey
    Iceberg lettuce head

    olive oil spray and seasonings of choice

    **measurements are approximate. You can modify to your desire.


Dice veggies into uniform size (small)
Broil tomatoes (with salt, pepper and a spray of olive oil) for about 8-10 minutes.
Meanwhile, saute the onion, bell pepper, broccoli, and carrots with preferred seasoning so they start to soften.
Add turkey to veggies and begin to brown it (season again).
When turkey is almost finished, mix in the roasted tomatoes.
Cook until turkey is cooked through.

Take off heat, wrap with iceberg lettuce, top with topping of your choice and enjoy!
