Number of Servings: 8

Ingredients

    2 lbs. stew meat
    1/4 c. flour
    salt & pepper to taste
    2-3 tsp. olive oil
    1/2 medium onion, chopped
    2 teaspoons minced garlic
    1 can (14.5 oz) diced tomatoes with oregano, basil, and garlic
    2 carrots, sliced
    2 stalks celery, sliced
    4 medium potatoes, peeled and cubed
    Any other veggies you want (I clean out my fridge of leftovers)
    Bay leaf, optional
    1/2 cup wine
    Water or broth to cover

Directions

Combine flour, salt, and pepper. Dredge meat in flour. Heat oil in large pot. Brown meat, onion, and garlic, in batches if nessessary, in oil. Add all other ingredients and cover with water or broth. Stir, making sure to get all the yummy bits off the bottom of the pan. Bring to a simmer and cook until veggies are tender. Remove bay leaf and serve with crackers, corn bread, crusty bread, anything you like.
