Introduction

Winter days are warmed with this pot of soup. Winter days are warmed with this pot of soup.
Number of Servings: 12

Ingredients

    2 cups cubed Ham (I use smoked neck
    bones or hocks sometime just to add flavor)
    water
    1/2 tsp salt
    1/4 tsp garlic power
    pepper to taste
    1 medium onion chopped
    I (28 oz.) can of diced tomatoes
    3 baking potatoes cubed
    1 cup sliced carrots
    Use large pot half filled with water and add above ingredients. Let cook until potatoes and carrots are done.
    Add: 1 cup corn
    1 cup rice
    Simmer until ready to eat.

Directions

Use large pot (holds at least a gallon). Fill about half to a little more with water. Add seasoning to taste. (you may like more than what is listed). Add onion, ham, tomatoes, potatoes, & carrots. Cook until potatoes and carrots are done. Add corn and rice. Simmer until rice is done.

    Everyone enjoyed this soup immensely. I didn't have any corn or rice but substituted with green savoy cabbage and zucchini and it was very tasty and filling. - 1/1/08
