Introduction

Ingredients

2/3 cup butter
2 large eggs
1 1/3 cup sugar
1 1/2 cup mashed banana
2 3/4 cup flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1/2 cup oikos vanilla greek yogurt
Directions
Cream butter and sugar until fluffy. Add eggs one at a time beating well after each. Add mashed banana to this. Set aside.
Mix together flour, salt, baking powder & baking soda.
Have the yogurt ready to mix in separately.
Add the dry ingredients alternately with the yogurt to the butter egg mixture ending with the dry ingredients. This makes a very thick batter. Spoon into 2 greased loaf pans. Bake at 350 F up to 55 min. checking after 45 min.
Tastes great and can be frozen.
Serving Size: This makes 2 regular size loaves of banana bread 10 servings per loaf.
