Ingredients

    1 lb cooked chicken breast (shredded or chopped, 465 grams) I used 9-10 chicken tenderloins

    1/2-1 cup chopped celery
    2 cups seedless grapes, halved
    1/2-1 cup chopped nuts (almonds or pecans)
    1/4 c low fat mayonnaise
    1/4 c homemade chicken broth (reduced from 1 cup)
    1 tbs soy sauce
    1 lime juiced
    1 tsp curry powder
    1 tbs sugar-free Polaner apricot preserves (what I had)
    Salt to taste

Directions

Add all ingredients to a mixing bowl and stir until well blended. Taste for seasoning. Refrigerate and serve on sandwiches or on top of a bed of greens.

Rotissaried chicken works great if you want easy and more than breast meat.

Serving Size: makes 7 1-cup servings
