Ingredients

    1 lb penne pasta
    1 t olice oil ( or a couple spritz of cooking spray)
    1-10oz frozen spinach
    6 cloves garlic, minced
    1-19oz can white beans
    2 c diced tomatoes (or one can), drained but keep the juice.
    2 t dried oregano
    salt & pepper to taste

Directions

Make 4 servings
Cook pasta according to directions - reserve about a cup of pasta water. Microwave spinach until defrosted. Using a clean dish towel, wring out water (be careful, spinach could be hot). Heat a large saute pan over medium high heat, add olive oil (or coat bottom with cooking spray). Add spinach and cook until fully heated, add garlic and saute for another minute. Add drained tomatoes, saute for another 2 minutes. Add tomato juice (from can), beans, oregano and salt and pepper to taste. Add cooked pasta to pan, toss to combine. Add reserved pasta water, if necessary. Serve, add parmesan if desired.

*I simmer the white beans separately prior to combining with spinach and tomatoes to make them softer, but it's not required.

    Incredible!
    I just would like to say that I was looking for a quick meal to make with ingredients I had on hand, and found this one. I used elbow noodles. My kids tore this up! My 8 year old and my 15 yr old both asked for seconds! I loved it too. Definitely will make again. - 7/1/10

    This sounds really good! I'm saving this to make in the future, maybe this weekend. Always looking for more ways to sneak spinach into dinner. - 12/12/07
