Ingredients

1 10oz pkg fresh baby spinach
1 15oz can cannellini beans, drained and rinsed
4 oz crumbled feta
1/4 cup sun dried tomatoes, coarsely chopped
2 green onions, chopped
2 cloves garlic, minced
1 tsp finely shredded lemon peel
2 Tbsp lemon juice
2 Tbsp olive oil
1 Tbsp oregano, snipped
1 Tbsp thyme, snipped
1/2 tsp salt
1/2 tsp pepper
12 oz farfalle pasta
Directions
1. In a large serving bowl, combine spinach, beans, feta, tomatoes, green onions.
2. In a small bowl, combine lemon peel, lemon juice, olive oil, oregano, thyme, salt and pepper. Pour over spinach mixture. Cover, let stand at room temperature while preparing paasta or up to 2 hours, stirring occasionally.
3. Shortly before serving, cook pasta according to package instructions. Drain pasta, reserving 1/4 cup of the cooking water. Toss cooked pasta and pasta water with spinach salad mixture. Serve warm or at room temperature.
