Ingredients

    bitter melon (ampalaya),16 oz
    water chestnuts,1/2 cup slices
    Ginger, ground, 1/2 tsp
    Fermented Black Beans,1 tbsp, rinsed
    pepper, black, .5 tsp
    Oyster Sauce, 2 tbsp
    Corn Starch, 2 tbsp
    Chicken Broth, 1 cup (8 fl oz)
    Kikkoman Soy Sauce, .66 tbsp
    Granulated Sugar, 1 tsp
    Garlic , 2 cloves, minced
    onion powder, 1 tsp
    Ground Pork, 3 oz
    Ground Chuck 80/20, 3 oz
    Olive Oil, 2 tbsp

Rinse black beans in warm water. Drain and mash with 1 clove of garlic. Set aside.

In a bowl, mix pork, beef, minced chestnuts, 1 T cornstarch, onion powder, and 1 T soy sauce. Set aside.

Cut each bitter melon into 1" slices. Using a knife, remove the spongy pulp. Sprinkle with some salt, let sit for 15 min. Rinse. Drain.

Overstuff each slice with meat mixture. Meat will shrink when cooked. Heat oil in a pan, and brown slices lightly on both sides. Remove from pan.

Add 1 T oil and fry black bean mixture for 1 minute. Stir in soy sauce, oyster sauce , sugar, salt, and pepper . Stir in broth and cornstarch, and bring to a boil. Return stuffed bitter melons to pan and bring back to a boil. Reduce heat and simmer, covered, for about 15 minutes or until bitter melon is tender.
