Ingredients

1 jar Randall's Deluxe Pinto Beans (48 oz)
1/2 cup Tomato juice
2 cans Rotel Original Diced Tomatoes & Green Chilies (10 oz)
1 cup Onion, chopped & sauteed
12 oz sliced bacon, chopped, cooked, grease drained
1 squeezed lime or 1 oz lime juice
3-6 tbsp cilantro (to taste)
Directions
Add beans, tomato juice, Rotel and sauteed onions to large cooking pot and heat to boil, then turn to low heat. Cut bacon slices into small pieces and fry crisp. Drain grease from bacon and add to soup. Stir in bacon and cook on low for 5-7 minutes. Just before serving, add a couple teaspoons of lime juice and a 1/2 cup or so of chopped cilantro.
Serve hot w/tortilla chips or as a great side dish to enchiladas, fajitas, steak or other Mexican main dishes.
