Ingredients

    12 oz uncooked shrimp
    1 large onion, chopped small
    3 large carrots, chopped into bite sizes
    1 medium sweet potato, chopped into small pieces
    2 cans Thai Kitchen coconut milk, lite
    1 pkg Golden Curry sauce mix (use 2 squares).
    1 pkg Thai Kitchen thin rice noodles

Directions

Cook and peel shrimp and put aside.
Slightly brown onion in soup pot then add carrots and sweet potato.
Add both cans of coconut milk and simmer to soften vegetables and add shrimp to soup pot.
Make thai rice noodles according to package directions.

Serve with noodles on bottom of bowl and cover with soup.
