Introduction

Serve over pasta or polenta with a sprinkle of parmesean.

Ingredients

    1/2 c olive oil
    5 cloves of garlic, sliced
    2 oz anchovies, chopped
    2 med eggplant, peeled and cut into 1/2" cubes
    2 bell peppers, diced
    20 pitted kalamata olives, chopped
    2 T. capers
    1 c fresh basil
    1/2 t. red pepper flakes

Directions

Saute sliced garlic in olive oil until brown, remove garlic from oil.

Add 1-inch diced eggplant and anchovies to oil and saute until golden and juice is released (10 min).

Add remaining ingredients and simmer for 30-40 minutes.

Serving Size: makes 16 1-cup servings
