Ingredients

    Chickpeas, one can rinsed
    2 servings of brown rice, cooked
    2 tbsp olive oil
    2 tbsp balsamic vinegar
    1 tsp maple syrup
    chopped parsley
    one red bell pepper chopped
    one chopped cucumber with skin
    salt, pepper, herbs to taste

Directions

Chop veggies
Cook rice
Add all ingredients in bowl and stir
Add herbs, salt and pepper to taste

Serving Size: Makes 2 servings or more if a side dish
