Introduction

Migas are a traditional dish in Spanish cuisine. Originally eaten as a breakfast that made use of leftover bread or tortas, today, migas are a fashionable first course served for lunch and dinner in restaurants in Spain.
In this modified form, I use a tortilla wrap instead of mixing the tortilla in with the breakfast dish.

Ingredients

    1 T dehydrated onion
    1 T green pepper
    1 egg
    1 T (apx .25 fl oz) tap water
    1 T salsa
    1/4 c. cheddar cheese
    1 flour tortilla


Directions

In a large skillet, saute first 2 ingredients (onion & pepper).

In a small bowl, whisk together egg, tap water, & salsa.

Add egg mixture to vegetable saute. Cook and stir until set.
Top with cheese. Spoon into a warmed tortilla

Serving Size: makes 1 tortilla wrap.
