Introduction

Ingredients

    3 pieces uncured bacon
    3.5 lbs Beef Stew Meat cut into 1-2" chunks
    3 medium carrots in a large chop
    2 Onions Chopped
    Sea Salt and Pepper
    1 cup of dark beer
    2-3 cups beef broth (low sodium)
    1 tbsp Dijon or other darker mustard
    3-4 sprigs fresh thyme or 1-2 tbsp dry
    4-5 cloves garlic

Directions

Preheat oven to 350 degrees
Fry up bacon in a large dutch oven on the stove to render the fat. LIft out the bacon reserving fat in the pan.

Season beef with salt and pepper. Sear/brown the beef chunks in the bacon fat. Do this in batches so you don't crowd the beef and can get a good sear on 2-3 sides of the beef pieces. Set aside with slotted spoon to a bowl.

Add carrots and onions to rendered fat in pan after cooking all of the beef. Add more olive oil if you don't have enought oil in pan. Cook for 4-5 minutes.

Deglaze pan with the beer scraping up all bits on bottom of the pan. Add broth, beef, thyme, garlic and mustard. Bring to a boil, reduce heat to a simmer and cook for 90 minutes.

You can simmer on the stove or if your pan is ovenproof you can cook it in the preheated oven for 90 minutes. You could also throw this in a crockpot to simmer for 4-6 hours as well.

Should be a very good comfort food for low carb foodies.
