Number of Servings: 10

Ingredients

    2 cups 2 % reduced fat sharp cheese, shredded
    2 cups 2 % reduced fat mexican blend cheese, shredded
    6 oz reduced fat medium cheddar cheese
    1/2 cup egg subsititue
    3 cups 1% milk
    8 oz elbow macaroni, dry
    2 tbl minced onions
    2 tsp Johnny's season salt
    1 tsp black pepper
    1/4 cup low cal margarine

Directions

Pre-heat oven to 350

Cook macaroni per package, drain

Set aside 1/4 cup of the sharp cheese and 1 oz of the medium cheddar for garnish

Spray a 9 x 13 dish with cooking spray

Starting with the macaroni, layer the cheeses, macaroni and margarine evenly ending with a macaroni layer.

In a separate bowl mix together the egg subsitute, milk, season salt, pepper, and onions. Mix well.

Pour mixture over macaroni layers

Sprinkle the 1/4 cup of sharp cheese on top
Garnish with slices of the medium cheddar

I also usually top with 1/4 cup of crush cornflakes or bread crumbs or potato chips for a crunch. This is optional.

Bake for 1 hour at 350

Let rest for about 10 minutes before serving

Serving Size: 10 servings - 1 cup each
