Introduction
This is a very brothy, basic, cream of chicken soup. Low carb, flour free. You can add more veg, thicken it, add noodles if you do them. Ingredients

3 large green onions
3 large stalks celery
1 stick butter
3 cups cubed cooked chicken (Leftovers from roasting a bird would be great!
8 cups chicken broth (more or less will make it more or less stew like)
1 cup white wine
Salt and Pepper to taste
garlic or garlic powder
Oregano
Thyme
Basil
(other herbs and spices to your liking!)
Directions
Melt the butter in a large soup pot. Do not brown. (Medium Low heat)
add the onions and celery, saute til soft
Add any spices
Add chicken cubes
Add wine and broth
Simmer, reduce heat to low. I left mine for an hour or so, but cooking longer will help all the flavors meld and reduce the broth a bit more.
In the last 15 minutes, add the heavy whipping cream. Adjust spices to taste.
Serve and enjoy!
