Introduction

If you dn't have buttermilk on hand, put 1T vinegar into a cup of milk., or use plain yogurt. These pancakes are even better if they are mixed the night before and the batter sits in the fridge over night. Ingredients

    3/4 c whole wheat flour
    1/4 c toasted wheat germ
    1/4 tsp salt
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp nutmeg
    1 T sugar
    1 egg
    1 c buttermilk
    1 T melted butter

Directions

Mix flour, wheat germ, salt, baking powder, baking soda, nutmeg and sugar together. Beat agg and add milk to it. Combine flour and egg mixtures, Add melted butter. Cook on hot griddle, using 1/4 c batter for each pancake. When bubbles appear, flip to cook other side.

Serving Size: Makes 15 pancakes, or 5 servings.
