Ingredients

    1 pk reduced fat crescent rolls, 12 eggs, 1 pkg frozen spinach drained well, minced onion, garlic powder, 1/2 c. lowfat cottage cheese, 1/4 c. reduced fat feta cheese, salt and pepper

Directions

Mix eggs, cottage cheese, feta, garlic powder, onion, and drained spinach. Salt and pepper to taste. Place one crescent into each hole of a 12 c. muffin tin. Pour egg mixture into cups 1/4 inch from the top. Pour extra mix into a greased 8x8 pan. Bake at 375 for 20-25 minutes or until egg is set

Serving Size: Makes 12 cups (and 8 squares without crescent rolls)
