Introduction

This is my "marinara"/spagetti sauce - basic red w/ lots of veggies - easy way to sneak in the veggies to my kids is cut it all REALLY small, hello slap chop

I have served this over noodles, chicken, meatballs, pork chops - whatever some one might want a red sauce with.

Ingredients

    1 Zuccini
    1 Yellow Squash
1 sm can of chopped black olives
    1 med yellow onion
1 10 oz pk of baby bella mushrooms
Garlic to taste - I like A LOT
1 16 oz pk of Jimmy Dean Sausage (reg, low fat, sage, italian all work well)
1 lg container of red sauce - Usually the largest I can find at Costco (ragu, prego, etc - I try to opt for lowest carbs)

Directions

First I cook up the sausage till brown - during this time I cut up all the veggies very very small - I pull out the sausage when complete and let sit on paper towels to drain some of the fat - I use the same pan to saute the veggies - once they have cooked down a few minutes I add in the spagetti sauce (lgst bottle of lowest carb I can find) and mix w/ veggies, then I add the sausage back in, mix well - turn down and let simmer. Sometimes if I have a bottle of red wine I will add a little while simmering.

Serving Size: Makes a large skillet of sauce
