Good main dish soup served with a salad. Also great weekday lunch option. Make on the weekend and dish up individual servings into tupperware or mason jars. Store in fridge for up to 1 week. Ingredients

    1 TBS E.V.O.O
    1 cup onion, chopped
    8 cups fat free chicken broth
    2 cups torn fresh spinach
    2 cups diced, skinless roasted chicken light meat
    2 cups cheese-filled tortellini pasta
    3 TBS torn, fresh basil
    8 tsp shredded parmesean cheese

Directions

Heat olive oil in heavy 3-4 qt. stock pot. Sautee onion until soft. Add chicken broth and heat to boiling. Add tortellini and spinach. Cook on gentle boil until tortellini is done according to package directions. Add chicken & basil, heat through. Season broth with salt and pepper if needed. Dish up 8 servings of soup and top each with 1 tsp parm. cheese.
