Ingredients

1/2 cup raw onions, diced
1 large garlic clove, minced
2 Tbsp olive oil (no need for Extra Virgin)
1 miniature box raisins (.5 oz)
1 can garbanzo beans (chickpeas), rinsed and well drained
1/2 tsp ground nutmeg
1/4 tsp ground clove
1/2 tsp ground cinnamon
1 cup water
1cup dry RiceSelect TriColor couscous
juice of 1 lemon
2 Tbsp chopped fresh mint (optional)
Directions
In a medium saucepan, saute oil, onion and garlic until slightly caramelized. Add water, nutmeg, clove, cinnamon, and raisins. Heat to boiling. Add couscous and garbanzo beans. Cover and remove from heat. Let sit for 4 minutes. Fluff with fork. Stir in lemon juice and mint. Serve hot or cold.
