Introduction

My "go to" healthier substitute for my mac & cheese cravings...you can make this even healthier by reducing the amount of cheese used or using low fat cheese. Recipe is high in potassium (over 1,000 mg) and other nutrients....not something I allow myself to have "everyday", this is my special treat meal.

Ingredients

    4 small potatoes
    4 large eggs beaten with 4 TBSP of water
    4 Cups fresh spinach
    2 tsp smoked paprika
    2 tsp olive oil
    1 Cup shredded sharp cheddar
    .5 tsp kosher salt
    .5 tsp garlic powder

Directions

Preheat oven to 350 degrees...(I use my toaster oven)
1) microwave potatoes for 4-5 minutes, let cool.
2) heat olive oil in a medium (9") skillet over medium heat....skillet should be one that is oven safe...if you only have skillets with plastic handles, crumple foil loosely around the handle, this will allow you to put skillet in the oven since the pan won't be in there very long.
3) chunk potatoes into bite size pieces and add to hot oil in skillet.
4) sprinkle potatoes with smoked paprika (you can use regular paprika, but the smoked is WAY better), garlic powder and salt...stir and turn heat down to med-low and let potatoes brown...leave them alone, don't stir for at least 10 minutes.
5) beat eggs with 4 TBSP of water.
6) spread spinach over the top of potatoes and cover skillet to let spinach wilt for 3-4 minutes.
7) when spinach has wilted, pour eggs over spinach in skillet and sprinkle cheese over the top.
8) put skillet in hot oven and bake for 15-20 minutes.
9) pull from oven, let sit 5 minutes (to let it set) and cut into 4 pieces.

Serving Size: makes 4 servings @ 346 calories
