    SALAD:
    1 cup kidney beans
    1 cup chickpeas
    1 shredded carrot
    1/2 chopped apple
    1/2 chopped red bell pepper
    1 stalk chopped celery
    1/2 chopped cucumber

    VINAIGRETTE:
    juice of 1/2 lemon
    2 teaspoons olive oil
    1 tablespoon red wine vinegar
    1 teaspoon ground ucmin
    pinch of sugar
    pinch of salt

Directions

combine all salad ingredients

whisk together vinaigrette ingredients

drizzle vinaigrette over salad
