Before adding the almonds, I also topped with 1/4 cup of yogurt. Gave it a creamy, yummy flavour and texture, and added one dairy for the day. Ingredients

1/4 cup sliced almonds
1 cup quinoa
2 1/2 cups water
1 apple diced
1/4 cup dried cranberries
1 tsp cinnamon
1 tsp vanilla extract
1 tbsp brown sugar
Directions
Place almonds in a saucepan over med-high heat. Stir frequently until the almonds are toasted. Set aside.
Combine the quinoa, water, apple, cranberries and cinnamon in same saucepan. Bring to boil, cover and reduce to a simmer for 17 minutes. Stir in the vanilla and brown sugar. Divide between bowls and top with almonds.
Serving Size: Makes 4 servings, approx 3/4 cup each
