Ingredients

    1/2 c frozen corn
    1/2 c onion, small dice
    1 - 15oz can pinto beans
    3 chicken tenders - 41 grams each
    1T tomato paste
    1 c chicken broth
    1 1/2T chili powder
    3/4t cumin - ground
    3t garlic, minced (about 3 cloves)

Directions

Makes 4 servings
Chop chicken tenders into bite sized pieces. In a saucepan, combine all ingredients, including chicken. Simmer until chicken is cooked thoroughly and liquid has reduced.

Serve over rice, in a tortilla and alone. Top cheese or salsa or sour cream or hot sauce or all of the above. I prefer a smathering of Tapatio, spice!
