1/2 of a large Zucchini diced
1 larger yellow squash diced
1 can of Black beans
1 can of Pinto beans
1 tbsp of Cumin
1 tbsp of chili powder
1 tbsp Kosher Salt
1 medium onion diced
1 green pepper chopped
3 carrots chopped
Pepper to taste
1 tbsp of olive oil
1 bay leaf
1 cinnamon stick
28 oz can of crushed tomato
Directions
Heat olive oil over medium heat, add vegetables, bay leaf, cinnamon stick and spices, cook until soften.
Add beans and crushed tomatoes, bring to a boil and simmer for 30 to 60 minutes
