Ingredients

    1/2 c. Kraft Zesty Italian Salad Dressing
    2 lbs. boneless skinless chicken breasts
    4 15-oz. cans S&W white beans, drained and rinsed (7 cups)
    2 14.5-oz. cans Swanson Chicken Broth 99% Fat Free, (3.75 cups)
    1 c. La Victoria Enchilada Sauce Green Chile, Mild
    2 cups yellow corn, canned or frozen
    1 7-oz. can diced green chiles
    6 T. dehydrated chopped onion
    2 T. minced garlic
    1/2 t. chili powder
    1 t. salt
    1/2 t. black pepper
    1 t. garlic powder
    2 t. cumin

Directions

Pour dressing into a baking dish sprayed with nonstick cooking spray. Coat both sides of chicken breasts in dressing and then bake at 350 until done, approximately 35-45 minutes.

Set aside until cool enough to handle, then cut into small cubes. Put in large slow cooker with remaining ingredients and turn on to low. Cook for 3-4 hours to allow flavors to combine.

Serve on its own or topped with corn chips, cheese, light sour cream or other desired toppings.

Serving Size: 12 servings, approximately 1 1/4 cups
