Number of Servings: 7
Ingredients

3lbs Sweet Potato
2 T oil
2 onion, chopped
4" ginger root
2 T curry paste
2 cans coconut milk
6 C vegetable broth
7 T lemon juice
2 t salt
2 T sesame oil
.5 C fresh cilantro
Directions
1. Bake Sweet Potatoes fully in skin and let cool.
2. Fry onions and ginger in oil till soft.
3. Add curry paste and stir for one minute.
4. Whisk in coconut milk and broth.
5. Bring to boil and simmer.
6. Add peeled, diced sweet potatoes, let simmer in broth for five minutes to allow soup to soak through.
7. Add lemon juice...I find is best of you use measured tablespoons and fill to Just under capacity...so .8-.9 T.
8. Add salt.
9. Serve and drizzle with sesame oil and cilantro (optional).
Serving Size: makes approx 14 cups in total, 7 2-cup servings
