Introduction

Low fat Tortilla soup. Low fat Tortilla soup.
Number of Servings: 12

Ingredients

    2 lbs. skinless boneless chicken breast
    1 bag of frozen corn
    4 C Low fat, low sodium chicken broth
    3 cans of low sodium diced tomatoes
    1 medium onion
    1 bunch of cilantro
    2 jalapenos, diced and seeded
    2 T cumin
    2 T pepper

    OPTIONAL
    Dry out tortillas , cut into strips and bake at 450 for 2-3 minutes or until crispy. Or, cut into strips, place small amount of olive oil in small saute pan, fry strips in small batches. Allow to cool and crisp completely before serving.

Directions

Par boil chicken, dice into cubes
Pour chicken broth into stock pot or crock pot
Blend/puree tomatoes, onion jalapeno, cilantro and yogurt
Mix everything together in stock pot or crock pot
Add corn

Cook on low for 6-8 hours in crock pot
Cook for 2 hours in stock pot or until done.
